Why have I never heard of polenta before? Yummy, filling & versatile!
1/4 C corn meal, 1&1/4 cups water. Add sautéed onions, salt, pepper, garlic & a tiny pinch of red pepper flakes. Cook 45 mins then add 1T plain yogurt & mixed in a bit of cheddar. Yummo!

Our mother used to threaten to feed us polenta (corn meal mush) if we didn’t eat our food. It worked every time cause we hated corn meal mush. 😂

Polenta is wonderful! Try cooking it down enough to pour onto a wooden cutting board. Allow to cool. Cut into rectangles, brush with olive oil and grill. Great side dish.

yours looks fantastic. I make a batch and then portion it out and freeze it - its holds great and is awesome for breakfast.

Yummy but have you figured the calories? I quit eating corn since there are so many carbs.
