Officially passed the halfway point at weigh-in this morning at the clinic. I usually wait until Monday's to record on here, but went ahead and recorded it.
Made a taco bowl for late lunch. I'm trying to eat my bigger meal earlier in the day. RM had it with tortillas and sour cream. I had it on a small bed of quinoa and farro (no sour cream).
Chicken Mixture:
onion
red bell pepper
chicken breast
cumin
chili powder
Pico de Gallo:
onion
roma tomato
fresh cilantro
jalapeno
lime juice
1/2 cup quinoa and 1/4 cup farro
green onion tops for garnish (yes, I like a lot)
Also made cucumber and onion salad (WITH sour cream) to nosh on this evening.
