It's a dead easy thing to make, just fry up whatever bits of veg you've got and maybe a chilli, beat a couple of eggs with salt and pepper, throw that in with the veg, leave it for a few minutes so it cooks on the bottom, add some rocket or spinach, chuck on a bit of cheese and pop it under the grill for 5 minutes until it's bubbling. Voila! Have a go, you'll be impressed with the result. Serves 2 generously so just use less veg and only 1 egg if it's a solo meal.
