I am feeling really good. I am averaging almost a pound loss daily. I really enjoy cooking up healthy options for Jim and me. Yesterday was pretty special because I baked a Low Carb Pound Cake. Jim's most all-time favorite dessert is pound cake, and all these years we've been married I have never once baked it for him; mainly because it so fattening, but secondly, b/c I knew that whatever I baked would likely pale in comparison to his Granny's pound cake, which she would often ship to him when he was in the Army. Boy, did he love her baking!

Well, I recently found a Low Carb Pound Cake recipe on this website and I thought, what the hay - let's do it. The staple ingredients are Almond flour, Splenda, vanilla and lemon extract, etc... I baked it last night and I could not believe how much Jim loved it! He is not much of sweets eater - so I was shocked when he went back for a second piece, admitting he had to make himself resist getting a third piece. The texture of the pound cake was a tiny bit different - a tad bit grainey due to the almond flour, but quite good nonetheless. Jim said it is the best pound cake - right up there with his Granny's...which made me so happy.

I had one day this week that was a bit disappointing... A friend suggested I drop my net carbs down to 15 b/c of metabolic syndrome (from my PCOS) and doing this left me with a 900-something calorie intake...and I was hungry before bedtime. This day broke my 1-pound loss daily streak - I think because my brain told my body it was starving so hang on to everything you get... I gained one pound at my early morning weigh-in as a result...and then, the next day (Friday) having gone back to around 20 net carbs, I took in enough food for the body to lose fat naturally. At my early morning weigh-in I see that I lost that irritating pound. I just need to remind myself to listen to my body - and do what is working for me. If I fuel it properly it will work for me properly. Eat just enough to lose steadily. Too much is harmful and too little is harmful. I feel very very good with the steady weightloss I've seen this week and I plan on keeping it up!

I was not able to make the cake because I went to every store around here and no one had any almond flour. They were all sold out. Maybe there are morn Atkineers in the area than I thought.lol I had the co-op here in town order me some, but won't be in until the end of this week or the beginning of next. I am so bummed!!!!!! I really had my heart set on making it today too. I was just wondering how it would be with Coconut Flour.? Hope you had a great day.:)

want2lose: How'd it go? We finished off the very last piece last night - and after four days, it was remarkable how moist it remained. That was one good pound cake! I am making my second on this week to take to dinner at a friend's house.

Laurie, Oh, so disappointing. But, you know, I think you are on to something, hon. Perhaps you should make it out of coconut flour. I think that would be terrific! My hubby LOVES coconut - I'll bet he'd like that. Where do you buy your Coconut Flour at, Laurie? I don't believe I've seen it around here.

vackerman: thanks you so kindly for your encouragement! WOW! That was so refreshing - especially since I've felt a bit bummed the past couple of days since the progress has been slower here recently. It means a lot that you would take the time to cheer me on! Consider yourself HUGGED, friend! :D

Evie: Right back at ya! Keep up the good work! You can cheer me on these next few weeks as I will be facing knee surgery and trying not to lose all the progress I've made. Keep smiling!

It was pretty good. Def would have been better w/ whipped cream and maybe some fruit. I am not a huge fan of lemon, so next time I may try using another flavor extract. But was def a hit w/ me as I miss the sweets and all that halloween candy around was making me crazed..lol Thanks again!

Laurie, you are a genius! I tried to find Coconut flour yesterday, but no store I go to regularly carried it. Bought some coconut extract and decided to make the pound cake with the C extract instead of the lemon. I had some friends over last night so made it for us to "test". It was a hit! So moist!! Next time, I will add 2 tsp of coconut extract b/c some of the flavor "baked out" - and it wasn't as "coconutty" as I expected it would be. All the ladies asked for the recipe and one even called her husband to let him know she was bringing him home a treat! (He can only eat gluten-free foods and has not had pound cake in years - it's his favorite! His wife said she knows he will "tackle me with hugs" next time he sees me...to finally learn that he can have his cake and eat it too.)
