Corn cucumber tomato scallion salad with sesame oil and rice vinegar, mmmmm! 😊

Jadekohnam Here’s the recipe I altered a recipe found on Foodtastic Mom 12 oz cooked corn - 1 Sliced or diced cucumber- 1 diced Roma tomato - 1/4 cup green onion, chopped - 3 Tablespoons low sodium soy sauce - 2 Tablespoons Sesame oil - 2 Tablespoons Rice Vinegar - 1 Tablespoon brown sugar - Whisk soy sauce, sesame oil, rice vinegar, brown sugar and green scallions together. Pour over veggies, cover bowl and place in fridge for a couple hours to marinate. Then serve.
