Still doing pretty good, I would say that I am following the diet "reasonably well". I am hoping that my weigh in next Tuesday will reflect as such! I know it will.
Question regarding the upcoming Thanksgiving holiday, we had a discussion during lunch about Cool Whip vs. "real" whipped cream. If I were to indulge in something sweet, which would be the better option? I am thinking of baking some "pumpkin squares", my grandma used to do this because I did not like pie crust, so she just baked it in a pan. I can do an Atkins friendly version, but it just isn't as good w/o a little topping. Someone was saying Cool Whip is not a dairy product (??) and that got me a little confused.
Thanks for any input and maybe if I write it down, I'll post the recipe for the pumpkin squares! =)

Cool whip (s/f of course) or whipped cream made with splenda would both work. Personal preference, really. Both are legal "treats", just don't go overboard. BTW they are also good on s/f jello. :)

I make a pumpkin cheesecake with a pecan crust for Thanksgiving - all Atkins friendly. I use real whipped cream because I like it better. I actually have people asking for it this year. Which makes me laugh because its all sugar free!! I, like you, am saving my indulgences for those things that I cannot substitute anything for - like stuffing!!!

Oh, I LOVE my uncle's oyster stuffing, I am certainly waiting for that. I am also trying to figure out some sort of Atkins friendly green bean casserole. I am planning on just taking some plain green beans, but thought if I could spruce them up (other than just by adding some dill & butter) others would partake.
