that sounds good. I love butternut squash. Never tried the soup

It is delicious! I’m glad I made it.
1 butternut squash cut in half
1 onion
3 potatoes mine were small
2 Carrots I only had tiny ones
Drizzle w olive oil salt n pepper
Roast at 400 for 45 mins
While roasting
cut 1 Apple (any kind) into cubes
Add 1/4 tsp fresh ginger and sauté in olive oil
After roasting, scoop out seeds of squash
Save seeds for roasting, sprinkle w salt and pepper and olive oil, 275 for 15 mins.
Place all roasted ingredients into big pot
Add 6 cups of broth
Mix well then transfer to food processor 2 cups at a time.
I don’t have one so I used an immersion blender

I forgot to add 1 clove of garlic
You can roast it with veggies but put it on the pan later. It won’t need 45 mins of roasting.
Or you can add the garlic to the apple and ginger sauté at the end. (To not over cook)
After all is blend add a touch cayenne pepper and salt and pepper to taste.
Let me know if something doesn’t make sense.

I love squash soup in the Fall! I skip the potatoes(fewer carbs). Have never added apple but def will; sounds delish! I use the roasted seeds for garnish when I serve the soup. YUM!

Wifey9707, yes sauté the apple with the ginger. You have the option of sauting the minced clove of garlic here too. Put the garlic in towards the end for 30 sec to 1 min. Do not over cook the garlic.

Wifey9707 No worries! You can make it without ginger. I had such a tiny amount of ginger in my fridge. I think it’s totally ok! I just now remembered that I added a dash of cayenne pepper to the soup before I blended it with the immersion blender.
