This is beans and artichokes with lemon and parmesan, a recipe I got from Hugh Fearnley-Whittingstall. Easy healthy fast800-day lunch. I use tinned artichokes not the jarred marinated ones, cheaper and work just as well. 264 veggie calories.

Trying to think what would work in place of the parmesan to make it vegan, Elizabeth. For me it’s partly the difference in texture as the other ingredients are quite soft. Maybe a few nuts or seeds.
