2b29again, I am a carboholic also and am always looking for lower carb foods. a friend on the south beach diet gave me the idea for this filling "sweet" treat. I was a little dubious at first but after i tried it, I'm hooked. I'm sure the South Beach diet has many more recipes and am sure you can find the actual recipe in their book but this is what i do.1/2 cup fat free ricotta cheese, 1 packet sugar substitute,1/2t vanilla, small amount of mocha powder or instant coffee.sometimes i substitute coconut or banana extract instead of vanilla. Mix all together and eat like pudding. It is quite filling, lasts a long time and has about 60 calories,0 fats and about 4 carbs. I have to buy Fat free Ricotta at Traders Joes or Whole foods markets. All the best. Let me know if it works for you
