I created something AWESOME last night. I have found that frustration breeds invention!! (A "Eureka!" goes right there...)
Well, you see, I make one mean potato soup. I made it last weekend for our guests, and Jim and Alan scarfed up the left-overs. Really, it is one of my most favorite soups to eat, but it is not allowable for me w/ this healthier way of eating - so I just enjoyed watching them enjoy the soup and I loved the smell, but I stuck with my faithful Vegetable Beef. So, yesterday I got to thinking -- What can I do to make adjustments to my recipe which would still give me the same result like I am eating my potato soup?
I invented a Cheesy Loaded Vegetable Cream Soup that is out of this world!! I totally revamped the recipe and I like it a lot, a lot, a lot! (Alan is gonna go nuts for this stuff when he gets to try it later today.)
I sautee'd celery, fresh chopped mushrooms, and onions in olive oil. I cut up 1.5 cup of brocolli, 1.5 cup of cauliflower, and 1/2 cup of baby corn. (I read an article by a nutritionist reporting that baby corn is completely healthy b/c of it's very low carb content. She reports that corn does not take on the starchy high-carb quality until it is fully-matured; therefore, baby corn is completely allowable for me on this WOE.) Instead of milk (which my regular recipe calls for) I used 2 cups of half & half, 3 cups of chicken broth and seasonings (paprika, sea salt, pepper) - and let all that wonderful goodness simmer until the veggies were nice and tender. Just before serving, I added cheddar cheese and stirred until completely melted.
Boy, was this stuff amazing!! And, only 3 net carbs!! Unbelievable! (And, now I do not miss my potato soup any more! Not at ALL! I have something so much better!)
I love this WOE - we are really not missing out on 'anythang'!
