Thank you! I use parchment paper on a baking sheet, lay the fish on it, season with whatever you want, spray with oil, sprinkle panko on top, spray again & bake! Usually it takes about 10 mins at 375*. The breaded doesn’t get as crispy as frying but, I still dig it!

I learned a trick recently to crisp up the bread crumbs. Start with a hot sheet pan (or cast iron or glass bakeware). You can leave it in the oven as it preheats and when you're ready, put the fish directly on the hot pan. Just be careful, it'll cook a little faster
