I love soups! And this one looks especially good. I saw this post yesterday and it inspired me to make a huge pot of cabbage roll casserole soup today. Delicious 🤤

1 cup of dried red organic lentils
3 stalks celery
Two cups of frozen veggies, whatever kind.
Tsp coriander
Tsp cumin
Tsp tumeric
1 bay leaf
Pinch of pepper flakes
1 large can diced tomatoes
3 cloves garlic
One onion
Tsp fresh ginger
I heat up the celery, onion, garlic and ginger in 1tbsp oil, once it starts to get a bit transparent i add in the spices, i crush the coriander seeds first.
After about 10 min I add 6 cups of water and a cup if rinsed/drained lentils. Once they are good and tender I add the tomatoes. I boil up the frozen veggies separately and then add them, can add with the water they are cooked in if you want a thinner soup. I usually serve with cilantro after it's slowly simmeres for a few hours.
