My 14yo made katsu chicken with rice, pickled cucumber and a Chinese leaf salad👏👏👏

Haha! She is a typical teenager I promise, plenty of stress, but cooking does seem to be a happy place for her. Now to clean up the mess 😂😂😂

I only have 1 daughter and she’d rather die than lift a finger than help around the family home (she’s 20 in 2months!!) so your lucky! I have more help or willingness from my 4 sons - aged 21, 14, 14 & 13! ( yup I have gorgeous twin boys!) xx

OK Nadia, here we go! This is for 4 generous portions! Chicken breast: Bash each chicken breast out with a meat hammer or rolling pin (I use baking paper to avoid mess. Dip each breast in flour, then beaten egg, then a mix of panko & cornflakes. When you are ready, fry for 4-5 mins on each side, until golden brown all over. You might be able to do this in an air fryer too. For veggie you could use tofu. Pickled Cucumber: Thinly slice a cucumber. Toss in 4 tbsp rice wine vinegar and a pinch of salt. Set aside to pickle. Slaw Finely slice a Chinese leaf cabbage and a white onion. Mix with a big pinch of salt. Add 2 tbsp of rice wine vinegar and 4 tsp of sesame oil. Toss together. Katsu sauce: Add a thumb of grated ginger, a white onion, 2 carrots, 2 cloves of garlic, and a chopped red chilli to 2 tbsp oil and a big pinch of salt to a saucepan. Put on a low heat and cook for 10 mins. Add 3 tsp of curry powder, and 3 tsp of turmeric. Stir to combine and cook for a minute then add 2 tins of coconut milk, stir, and turn the heat up to bring to the boil. Once boiling, turn the heat down to low, and simmer for 15 mins. Strain through a sieve before serving. Serve with rice if you want.
