Ah, but pumpkin is pretty amazingly healthy, especially if you don't add sugar and eat it in moderation. Did you know you can make pumpkin and tomato soup? I've seen a recipe, but never tried it. I do make a sweet potato and tomato soup with red lentils that's awesome. The sweetness of the sweet potato cuts the acid of the tomato just enough

Thai curries use a lot of pumpkin, and you can also roast it with eggplant. In season, I use it interchangeably with sweet potatoes or butternut squash with savory dishes.

I’ve made Mac and cheese with it. Use only half the cheese and replace with the pumpkin. It gives it a rich orange color and added fiber
