TJV, a fresh fig tastes nothing like a Fig Newton. I like mine peeled, some people eat the peelings. The sap can irritate your skin. A ripe fig is slightly soft when squeezed and, naturally, gets sweeter as it gets softer. I hope you manage to steal a few from the birds. Here in the deep south, they're ripe now, I have no idea when they'll be ripe where you are.
