I make coffee every day with non dairy creamer and those Sugar in the Raw packets. I have about 2-3 cups a day. I know to some it may seem like a lot of coffee, but I love my coffee in the mornings. I have more bowel movements now ever since I had become a vegetarian. Before it was every 2-3 days before I had one.
I am busy making my recipe journal. It's coming along really well. I am making it vegetarian friendly. I had found some ideas by watching a YouTube video, and I started making one myself. I had also ordered a cookbook as well to also give me ideas on what to make. I think that by having both of those would help me out a lot

I've cut back on coffee, but I used to count my consumption in pots, not cups 🤣 So 2-3 cups a day doesn't sound excessive to me, as long as you can work the sugar into your caloric budget. I never cared for sugar in my coffee and usually drink it black, although I do love a dollop of something creamy here and there. I hope you like the vegetarian diet -- it sure works for me. There are a lot of good food options that don't include meat, and it's not hard to have a healthy diet without it 😊

Writingwyo I tend to count how many sugar packets I use. I most of the time use only one packet which doesn't add as much to my calorie intake

I usually have 2 12 ounce mugs of coffee a day. I put sugar in it. I try to reduce the sugar but always end up back to where it tastes the way I like it. Vegetarian can be easier if you allow yourself dairy and eggs. Otherwise it's too many beans for me to get enough protein.

Yeah, a little sugar doesn't add a whole lot of calories, morgan, and if you enjoy it, go for it 😊 Fritzy -- if you rely on beans yep, that's a lot of beans. I rarely eat eggs or dairy these days, but I work in soy and seitan to keep protein high enough. I tend to be moderate with protein because of wonky kidneys, but if I wanted to, I could bump it up considerably with those two foods. Nutritional yeast is another good source, as is choosing seeds over nuts more often than not for the higher protein content

Writing, I often have just 2 tablespoons of pumpkin seeds which has over 4 grams of protein, about twice what 2 tablespoons of walnuts have. I've thought about trying switch although it's have no idea what it is, where to find it in the grocery store or what to do with it!

Fritzy -- I think autocorrect changed seitan to switch on you. If that's what you were trying to type, I make my own seitan from vital wheat gluten

Writing, I think you told me about seiten before. I was thinking of tempeh, something else I know nothing about

Oh, tempeh is good, too, and often easier to find than seitan. You should be able to snag either at a Whole Foods or Natural Grocers or the like. You could also order TVP online -- it's basically what's left after they extract oil from soybeans, so it's pretty much pure protein. You just hydrate it in water a few minutes and then use it like ground beef
