Many research records do state that the antioxidants in tomatoes esp.Lycopene (responsible for the red color of tomatoes) is more easily absorbed into the human body in the presence of fat & hence cooking the tomato with healthy fats like olive oil is more beneficial than eating it raw.

Yes.. coz by cooking it, the content of lycopene from tomatoes will increase
