An increase of 500 grams from previous day. I read somewhere that a kilo of body fat equates to 7500 cals and there's no way that I ate over 3000 cals yesterday. Am I getting hung up over water retention?

You'll find a variance in body composition e.g. Fat/water/weight daily.
I still weigh daily to stay on track, but have learnt not to get hung up on this natural variation
