Oh my goodness! We finally got the courage up to make Jamaican ackee and salt fish. It was wonderful! It might not look appetizing, and is high in calories, but it was so worth it. These are the leftovers for tomorrow's breakfast.

If you key "ackee and salt fish" into Google, you will find the surprisingly simple recipe at caribbeanpot dot com - "the ultimate ackee and saltfish recipe". (The onions and red pepper should be thinly sliced.) It's the national dish of Jamaica and at the resorts it's served on Sunday and Wednesday for breakfast. Just one word of warning if you try it - make sure you scrub your hands after mincing the hot pepper. I always wear nitrile gloves when preparing food (manicured nails). I washed my hands after taking them off, but I guess the glove mush have punctured because I rubbed my eye afterwards and, well, let's just say there was a lot of burning and watering. Still worth it though. :-)

The ingredients are pretty basic - onion, garlic, sweet red pepper, scotch bonnett pepper, tomato and salt fish. The odd one, which looks like scrambled egg, is ackee (we can only get canned). If you ever get adventurous, it's a dish worth trying.

You are correct - I'm living in St. John's but originally a bay girl. You? We travel to Jamaica yearly as a reward for getting through the year and the winter. We so love the culture, food and people. Ever been?

I cook Jamaican food all the time. Ackerman and salt fish is my fav! And jerk chicken, can’t beat it!! I’ve healthified the dishes!!

I’ve been there. The Chaulk’s used to be Salvation Army officers in Woodstock and I went there one Christmas with them. First and only time I rode a horse. LOL 😂 Arlene ( from Woodstock also) married Ted Chaulk and luv s there currently. I’m sure you must know them?😊

I've been gone away from home over 28 years now. I know the name though. Glen, if you want to try something new, easy, tasty and extremely high in calories, look up the recipe. It is a wonderful treat.
