Plum glazed Chicken stir fry. This is a great way to add flavor to the vegetables without adding a lot of salt or extra fat like cheese and butter. Highly recommended for those who are always struggling to eat their vegetables like me. 27g of carbs.

I love homemade stir fry but all the store seasonings/sauces are very unhealthy. What did you put on this? Hubby says I can’t cook Chinese because I don’t like using the sauces so I could have this all to myself :).

Recipe please...or just a list of the ingredients. That looks wonderful and do find it difficult to get my veggies in. Thank you

I’d love the recipe as well :). I get most of my veggies in by steaming them slightly for dinner 3-5 days a week. Also weigh out portions to put away in 100 cal or less baggies. Then I get a baggie a day to munch on and just add one time under snacks. Some days I cook the rest for dinner. I have to make up bags for my kids to(not portioned out) because they want mine.

I used chicken thighs(boneless, skinless), brocoli, carrots, potato( i wanted to add more vegetables, but that’s what i had at the moment). For the glaze, I added 1 tablespoon of plum sauce to a 1/4 cup of water and let it reduce (medium heat). After the glaze was thick enough I added the previously cooked chicken and veggies into the pan and glazed them. I also found a video on youtube called “4,800 stir-fry recipes in this video” by Alex French Guy Cooking(youtube channel) for stir-fry ideas.
