Decided to challenge myself a bit and chose a different path, with steeper changes in elevation for my walk. This 1.5 miles (.5 miles longer than yesterday) was indeed a challenge… and to think it was not all that long ago that this same path made a regular appearance as half my of my morning run before going to the office. Be that as it may, while challenging, I did it with more left in the tank if I needed it. A long way to go but I will get back to running that.
Was hungry enough to eat, so tossed together 3/4 cups of pink salmon, 3 cups chopped fresh baby spinach, 2 tbsp of MCT oil and seasoned it all with lemon pepper, garlic, and rice vinegar. I’ve never mastered the ability to make a pretty dish worthy of a foodie pic but I am confident in my ability to make a flavorful one! :p
