Made pancakes for breakfast.. Replaced sugar with Stevia, milk with unsweetened almond milk. If I could figure out a good replacement for flour I'd be all set.

rice flour. or 100% whole wheat flour. it would give you less carbs and calories.

Oat flour is good, too - you can make it yourself if you have oatmeal and a blender. :)

OR... if you're avoiding carbs, oat bran might be better (most of the carbs are fiber)...

protein pancakes are great actually. follow the instructions and add just a small 1/4 cup of greek yogurt and you will be surprised.

We tried the carbquik recipe and it was ok, kind of grainy. We then tried a 50/50 mix of bisquick and carbquik which actually tasted good and worked out ok. the recipe is in my cook book if you are curious. here is the information. Almond flour and coconut flour both can replace regular flour. I have read that coconut flour absorbs more than regular flour though so you have to play around with the liquid measurements.

You can make pancakes out of eggs and cream cheese that taste just like the real thing.
