My Thanksgiving plan is complete!
Appetizer/snack:
2 bell peppers + 1/4 cup hummus (202 calories)
Supper:
2 small Yukon gold potatoes (220)
2 cups broccoli florets (40)
1/4 cup vegan queso (90)
"Mexican street veggies"--1 1/3 cups mixed veggies, 1/4 cup Violife cheddar shreds, 1 tablespoon vegan mayo, Mexican spices (250)
Dessert:
2 vegan cookies (320)
If my math is correct, that's 1122 calories. I can't eat breakfast before a long car trip, so that will just be black coffee. Water to drink all day.

Kept my middle granddaughter last weekend, and she had a super-snotty nose. Last night my throat started hurting. ☹️ I probably won't be logging today, as my plan is lots of hot echinacea tea, broth with ginger, elderberry syrup, and a few small servings of hot comfort food. I promised my oldest granddaughter a "big girl" outing this weekend, so pushing hard to feel better quick!
