Vegetable and Cheese Stuffed Chicken Breasts
A fancy chicken dish consisting of breasts stuffed with broccoli and cauliflower florets and feta cheese.
Ingredients
Directions
- In a microwave, cook frozen broccoli and cauliflower until soft.
- Let vegetable mixture cool.
- Add feta cheese to mixture and mix well.
- Roll each chicken breast and secure with tooth pick, and place in baking dish that has been sprayed with Pam, or olive oil.
- Place chicken breasts in baking dish, tooth pick side up.
- Pour Italian dressing over breasts and shake paprika on top of each chicken breast.
- Bake uncovered in 350 °F (175 °C) oven for about 45 minutes or until done.
- Serve with cooked dressing spooned over chicken breasts.

I added Gouda Cheese instead of Feta and we loved it. I have made it both ways but love the Gouda best. I have also added red pepper to the stuffing and it changes it to a little more of tangy stuffing. It is really good that way.

My husband and I thought this was a great recipe. I spiced it up slightly by adding some cayenne pepper.

I made this last night and I thought it was very tasty! I used all broccoli because I needed to get rid of it and for the dressing I used Cheese Fantastico Light. It has almost no calories and it taste really good.
Instead of feta I used ricotta because the creamy consistency made it easy to blend with the vegetables. Also, I couldn't find non-fat mozzarella as per another suggestion so ricotta was a low calorie choice. You may have to add some salt though because ricotta is a fairly bland cheese.
I also added bacon bits to the stuffing. This was a great suggestion! The other thing that I added was cayenne pepper when making the chicken. This made a huge difference! It added a lot of flavor and the perfect amount of kick.

great taste !!!used mozzarella instead of feta

I skipped the cauliflower and put tomatoes in instead, added some fresh basil and used fat free mozzerella instead of the feta and it was delicious! great recipe that can easily be used with a variety of veggies/cheeses!
