Pumpkin Treat

A treat to quell those sweet cravings.

Ingredients

Directions

  1. In a microwave safe bowl, microwave cream cheese and butter for about 30 seconds or until soft.
  2. Mix in pumpkin, then add Splenda and pumpkin pie spice to taste.
  3. Eat warm or cold or however you please!
  4. Note: if using canned pumpkin, make sure to get pure pumpkin rather than pumpkin pie filling. The only ingredient listed on the can should be "pumpkin".

Hello?!? One serving, with a quarter-cup of CREAM CHEESE plus a TBS of BUTTER?!? What planet are they living on? Since when is this a "diet" treat?!? I would certainly try it using fat-free cream cheese and diet margarine, but it might not taste the same -- don't know.

I actually tried it with 1/2 cup low fat ricotta and 1 tsp splenda brown sugar, it was still yummy!

I LOVE pumpkin. On Atkins it is hard to get Vitamin A and this is loaded full. I have never tired with cream cheese--YUMMY!! Plus it has good fiber. This is so much better than taking vitamin pills.

I think this recipe would be ok in moderation, everything in it you can eat in phase one. Sounds good too.

Sounds yummy but I don't think this recipe would be considered Fat Flush friendly in phase one or two, because of the dairy and fat content.
