This low carb meat loaf is delicious.
Ingredients
Directions
- Heat oven to 350 °F (175 °C).
- Mix all ingredients and put in a 8x8" pan. (No need to make into a roll.)
- Bake for 1 hour uncovered then remove and let stand 10 minutes.
- Note: you can use sausage instead of beef and try and use salt free tomato sauce.

I'm going to try this.
Kiki, I agree with you on the pork rinds. I hate them but when your snack food is limited....you start snacking on some strange things. Pork rinds are something that I never thought that I would ever put in my mouth.... Never say Never!

This sounds good ... I've made it with the shredded parmesan cheese but have never thought to use the pork rinds ... I like the Lousiana Hot flavored ones!!!
