Mixed Bean Salad
A crunchy assorted salad.
Ingredients
juice of 1 lemon
1/2
large
red sweet pepper
400 g mixed green salad
1/2 avocado
8 cherry tomatoes
1
medium
braeburn apple
4 medium celery stalks
1/2 cucumber
4
medium
spring onions
1/2
large
yellow sweet pepper
6 sun-dried tomatoes
Directions
Mix all ingredients together in a large bowl.
Salad will keep for up to 3 days in a plastic airtight container.

Brilliant salad, but not a bean to be seen!!!! I was looking forward to that, whereas I have a similar salad usually with a piece of tuna or salmon nearly every day. When in season a nasturtium flower/s are sensational
