Vegetarian Chili

A hearty, filling and easy chili recipe that's great for Fat Smash Phase 1.

Ingredients

Directions

  1. Sauté onions and garlic in large saucepan sprayed with non stick spray until tender.
  2. Add cans of diced tomatoes, black beans (or kidney beans) with liquid, corn (optional) and water, and cook on medium heat.
  3. Add chili powder, cumin, salt and pepper to taste. Add ground red pepper for a spicier flavor.
  4. Simmer uncovered for about 20-30 minutes until desired consistency - enjoy over brown rice if permitted.

This is FABULOUS! I made this recipe exactly as it was written and added one bag of Morningstar Farms crumbles. Even my picky children loved it, and it will become a regular dish at our house. =) I also thought that the calorie information presented seemed way too high, so I did another calculation (on a different site). Even with the addition of one bag of soy crumbles, the calories per serving were only 249 and the total fat per serving was 4.2.

This is fine. I added a a red pepper, a little frozen chopped spinach to up the nutrients, and some portobello mushrooms to give it a little texture. The calorie count seems really really high for something containing just beans, tomatoes and spices. Is it the corn? (I didn't use it. )

I used olive oil(1 tsp) to sautee onion, celery, carrots, and red bell peppers. With the Boca crumbles and some smoked paprika, this was a great meal. After phase 1, I'll add some low fat cheese! Yummy!!!!

Simple and Good! I used pinto beans, and red and yellow bell peppers because that's what I had on stock. Over brown rice! Yum.
