A variation on the classic tabbouleh salad. Great on the go salad that is fresh and light.
Ingredients
Directions
- In a large mixing bowl, add olive oil, lemon juice, garlic and quinoa. Season with salt and pepper if desired.
- Mince the red onion and place in the bowl with olive oil, lemon juice, garlic and quinoa.
- Finely chop the tomato and cucumber and add. Gently mix together.
- Remove stems of parsley, and finely chop the leaves. Add to the rest of the ingredients and gently mix until combined.
- For best flavour, refrigerate for 30 minutes before serving.
