90 Second Muffin
A slower version of the one minute muffin.
Ingredients
Directions
- Melt butter in small bowl.
- Add syrup and egg. Mix well.
- In separate bowl, mix baking powder, flax meal and almond meal.
- Combine all ingredients.
- Place in microwave and cook for 90 seconds.
- Eat plain, with butter, or even with a bit of whipped cream.

OK, chocolate chips didn't work. Batter is thin, so chips sank to bottom. Made an OK chocolate frosting, though!

This is really, really tasty! I used 2 Tablespoons Almond flour for the ground almond & 4 Tablespoons golden flax meal; this is a huge difference in the taste & texture compared to a regular fax muffin (MIM). So glad I tried it. I sliced, buttered & then sprinkled with a bit from a splenda packet. YUM!!
