Ingredients
Directions
- Sauté chopped onion and sliced celery until nearly done.
- Add pepper pieces and continue cooking for several minutes.
- Add sausage and diced tomatoes. Add tomato sauce and vegetable juice (like V-8). Simmer for 15 to 20 minutes.
- Serve over spaghetti squash.
- Note: canned kidney beans are optional but do add a great deal of flavor.
