Vegetable Beef Soup

Hearty vegetable beef soup.

Directions

  1. Trim all fat on london broil. Cut meat into chunks. Brown in the soup pot.
  2. Add all of the other ingredients. Add salt and pepper to taste.
  3. Bring to a boil and then simmer for 2 hours, or until you can't wait any longer!

we had this last night, everyone loved it!! I substituted fresh zucchini, summer squash, onion, chopped potato, fresh green beans and a few carrots for the 2 frozen stew veggies..YUMM-O!
