I experimented with a brownie recipe that I used to like, but I substituted Carbquik for flour, SteviaPlus for sugar, and egg beaters for eggs. They look mostly normal, even the texture is mostly normal except for being a little dry. Somehow they didn't end up very sweet. I'm wondering if getting splenda would have worked better. I used to have the kind of splenda used for cooking, but I must have used it all up. I'm thinking of trying to come up with some creative ways to use them... maybe crumbled and in some Medifast pudding or soft serve. I saw a recipe for medifast vanilla shake frosting too, and that might be enough to make it better.

I had some of the Medifast requirements wrong! I thought that it was at least 100g protein for the day, and its just a minimum of 70g. Also, I thought that fat grams had to be less than 35 but its actually between 10-30. No wonder I have had some trouble losing as fast as I wanted, I think I was adding extra protein because I thought I messed up! Protein generally has fat too. Plus I know a bunch of days where I was closer to 37g fat instead of 30. I feel kind of dumb for not being able to remember what my goals were. I had the meatless options page open on my computer where the 5&1 and the "Lean" options were spelled out as far as how many carbs/fat/calories/protein those should be. Oh well... live and learn. At least I haven't messed up today yet!

I'm not sure how much faith I put in the fat and water content calculators on my scale. It seems unlikely that my weight loss was entirely water, especially since it can change by an entire percentage over the span of one minute when I checked my weight a second time. I almost feel like I would have been better off with my regular scale! Oh well. At least I lost! All of yesterday's craziness paid off, even after my failed pudding attempt and my yummy chocolate cake using carbquik. I'm happy to report that my morning protein shake was actually rather tasty, so at least that wasn't a waste of money. I'm looking forward to getting a response from Walden Farms to see if I can return what I bought. I don't know how people can tolerate those products... I'm pretty sure that's what ruined the pudding and gave me a stomach ache last night.

Today I tried a few non-medifast items as substitutions... I hope the scale is ok with it! :)My carbs are much lower, but everything else is just about right as far as the recommendations. I could have done a little better as far as fat content, but I guess I was trying to be a little more lenient on myself today. I definitely wasn't "cheating" in any way. I'm actually pretty surprised that even though I tried this new (to me) product called carbquik, which is basically a low carb bisquick type mix, that my carbs are still low even considering that its low "net carbs" not totally low carb. It has 16g carbs but 14g of insoluble fiber, so basically its just 2 net carbs. I made a pretty awesome cake/brownie snack. It had a wonderful texture, so light and fluffy. It could have used more sweetener, but I was trying to adapt a recipe using different ingredients.
I am a little leery of my dessert for tonight, I mixed protein powder mix with xanthan gum (to thicken it), instant coffee (to cover some of the artificial flavor), and some sugar-free/calorie-free peanut butter from walden farms to hopefully give it a nice flavor. I'm not sure that I like the walden farms products... they taste very strongly of artificial sweeteners. I might have to look into their return policy. Oh... so the end result of that crazy stuff is chocolate pudding. It may be ok once it chills... I'm hoping for the best.
ETA: NEVER under ANY circumstances try to make pudding like this!!! I have a stomach ache and I couldn't even eat half of it. I'd try to get my protein some other way but I think I'd toss my cookies if I tried. Ugh. No good!!!
