Directions
- Mix all the dry ingredients together in a large mixing bowl.
- Add the yoghurt, cottage cheese and beaten eggs, and mix together very well.
- Add the melted butter and mix with a whisk until well combined.
- Pour the batter into a lined loaf pan.
- Bake in a preheated oven at 175 °C for 70-80 minutes.

Mine came really delish and beautifully brown! I used pecan flour instead of almond flour as it was considerably cheaper. A larger loaf than usual banting bread and nice and high. I managed easily to get 20 slices which I froze and use 1 at a time, mostly for toast. Using the RMR carb counter, the info -per slice/portion is as follows: 57.6g of which 3.34g =carbs, 13.71g = fat, 7.73 = protein. Thanks for sharing Donaldja!

can you advise grams on fats, carbs etc please.

Makes nice toast, especially with Marmite:-). Might need to trim the crust if it burns (due to the high fat content).
